There’s nothing finer than a summer in Hawaii, and the Star of Honolulu’s Five Star Sunset Dining & Jazz Cruise celebrates it with a new seasonal menu. Created by Chefs de Cuisine Adam Gilbert, Norman Soderberg and Kevin Carvalho, the menu features the colors and flavors of summer. The 7-course island-inspired menu in classic French style includes:
Summer Canapés, served butler-style,
with a Hawaiian Bellini
Smoked Kamuela Tomato Bisque
with Basil Foam and Grilled Crostini
Waimanalo Micro Greens accompanied by Scallop
and Compressed Watermelon Poisson Cru
Air-Flown Live Maine Lobster,
paired with Lobster “Surimi,” Sweet Kahuku Corn Sauce,
Kaffir Lime Beurre Blanc and Tsar Nicoulai Caviar
Intermezzo of Pineapple Cilantro Sorbet
Prime Tenderloin of Beef
on Spinach, Shallot Confit and Prosciutto Dust,
with Tahitian Vanilla Poached Potato and Port Reduction
“Ume” Strawberry Crème,
complemented by Candied Macadamia Nut Crumble,
Chocolate Air and Vanilla Anglaise
During dinner, guests are treated to live jazz music, white-glove service in the STAR’s elegant, newly renovated Super Nova room, super premium beverages and breathtaking views of the summer sunset and Waikiki coastline.
